The Olives, a historical heritage
These Olives, from Conservolea cultivars, are born in Thessaly and have very ancient origins.
They are the olives that are most suitable for processing as per our ancient tradition, which gave rise to Madama Oliva.
Dried in the oven, they acquire a typical and unique flavor, which takes us back to our childhood, when the smell of olives dried in the chimneys of the houses was typical of the town of Castel Madama, where our dream was born.
