Salted Lupin Bean falafel with yoghurt and mint sauce

Ingredients

Salted lupin beans: 300 g
Breadcrumbs: 80 g
Tahini: 2 teaspoons
Egg: 1
Fresh parsley: to taste
Mint: to taste
Curry powder: 1/2 teaspoon
Ground smoked paprika: 1/4 teaspoon
Sesame seeds: 10 g
Salt: to taste
Pepper: to taste
Peanut oil: for frying
Yoghurt sauce: to taste

Preparation

Place the shelled Salted Lupin Beans into the food processor together with the tahini, curry powder, paprika, egg, sesame seeds and aromatic herbs. Blend everything, then add the breadcrumbs, salt and pepper. Knead until a uniform dough is formed.

Divide the dough into portions and form small balls. Press down gently on each ball then fry them in seed oil at 170°C until nice and golden.

Drain, dry on a paper towel and serve them with the yoghurt and mint sauce.
