The giant pitted green olives belong to the Halkidiki variety, one of the most renowned in Greece. Grown in the Chalkidiki peninsula, they are characterized by a large fruit, with a fleshy and crunchy pulp and a delicate aroma.
Beef Tartare with Olives Ortolana

Extra virgin olive oil
Chop the meat with a very fine knife
Season with salt, oil and pepper and leave to marinate for 20 minutes.
Serve the tartar with vegetables and chopped lime peel.
